Grilled Salmon Skewers 

Ingredients

  • 500g of salmon fillet, cut into 3cm cubes 
  • 1 zucchini, sliced 
  • 1 small red onion, diced 
  • 1/4 cup of olive oil 
  • 1 lemon, zest and juice 
  • 3-4 cloves of garlic, chopped 
  • 2 teaspoons of thyme 
  • 2 teaspoons of oregano 
  • 1 teaspoon of ground cumin 
  • 1 teaspoon of chili 
  • ½ teaspoon of coriander 

Preparation

  1. Cut the salmon into cubes, slice the zucchini, and dice the onion. 
  2. Prepare the marinade. In a small bowl, combine olive oil, lemon zest and juice, garlic, oregano, thyme, chili, cumin, salt, and pepper. Add the salmon pieces, zucchini, and onion to the mixture. Leave for about 30 minutes or cover and refrigerate for about an hour. 
  3. Thread the marinated salmon and vegetables onto skewers. If using wooden or bamboo skewers, pre-soak them in water. 
  4. Place the skewers on a heated grill until ready.
