Cold Salmon with Avocado 


  • A handful of fresh spinach 
  • Slices of cold-smoked salmon 
  • 2 eggs 
  • 2 cloves of garlic, pressed 
  • A small onion, chopped 
  • Lemon juice 
  • Oil 
  • Salt and pepper 


  1. Fry the onion in a pan. Add garlic. Add washed spinach and sauté until the leaves wilt and the water has almost completely evaporated. Transfer the cooked spinach to a bowl. 
  2. Fry two sunny-side-up eggs. Cut the avocado in half and slice it widthwise. 
  3. On a plate, arrange the spinach, avocado, fried eggs, and then the sliced salmon drizzled with lemon juice.
